Peanut Butter Cream Cheese Apples : For Your Dog!

Today I realized that I had a book for dog treats and decided to try something easy.
I was surprised with the variety of snacks that one can make for dogs.
I don't plan on always blogging about dog treats but I thought that this might interest your mind.
I cut up an apple and took out the core.
I then sliced the apples.
I then mixed together some fat-free cream cheese and crunchy peanut butter.
After it was nice and blended I put it on top of apple slices.
Very simple!

Needless to say LILO loved it!
Nani even wanted a taste!

Apple Cinnamon Muffins

Today I decided to make Muffins.
Hector helped me choose what to make.
He wanted me to make apple cinnamon muffins.
It only yielded 6 but somehow I made ten!
I first peeled the apples and took out their core...
Then I finely chopped the apples.

I then mixed some flour ( Whole wheat and regular) with salt, sugar, and cinnamon.

Then I mixed milk, 1 egg, and apples into the dry mix.
I put it into cupcake liners and added brown sugar and cinnamon to the top.
I baked for 20 minutes...
And this is what came out:

They are super yummy!!

Chocolate Mousse

As usual I had a sweet tooth on Tuesday.
I had stay home sick Monday and watched cooking shows.
I happen to come across a chocolate Mousse recipe thanks to Kitchen Boss and decided to try it out!
I was very simple to make and very yummy!
All you needed is heavy cream, sugar, chocolate cocoa, and chocolate syrup.
Next time I want to try to melt chocolate myself instead of chocolate syrup.
I want to also use it as an icing on a cake.
I can't wait to experiment this summer!!

Everything I used...
Whipped the cream until it looked like....
Then I folded the chocolate syrup into it...

Viola... all done!

Tres Leche Cupcakes

I made some amazing cupcakes this past weekend! I was invited to a friends get together where he made tamales. To go with the theme of Spanish food I decided to bake Tres Leche cupcake with whipped cream topping. The minute I put them on the table of my friends house they disappeared in 10 minutes. All I have to say is YUM!!!

First I whipped 6 egg whites until it looked like meringue. This is what makes the cake nice a fluffy. I then added baking soda, kosher salt, and sugar. After it was all combined I add the yolk. I had to fold it into the egg whites because if I blended it together the cupcakes wouldn't be as spongy. Then I folded in a cup of flour. I then added the mix into the tin foil liners half way up because the mix tends to grow a lot.

I cooked it for 25 minutes and l took them out of the oven. I then poked it many times with fork so that I could put the tres leche mix on the cupcakes. The mix consisted of heavy cream, evaporated milk, and sweetened condensed milk. What came next took a very very very long time!! I had to baste the mix with a basting brush on top of each cup cake. I couldn't just pour the mix on top because then the cupcakes would become extremely soggy. So it took a long time to baste the cupcakes. I actually didn't end up using all of the mix.

Once the basting is done then you must wait at least 30 minutes before eating. Some people like to wait 1 day to let it fully absorb the mix.

Hector helped me out with the next part since we were running late. He made the whipped cream topping. He mixed the heavy cream until it was really fluffy and then added some powder sugar to add some sweetness. He then helped me put the whip cream on each cupcake. I decorated it with pinch of Cinnamon.
YUM!!!

Chocolate frosted chocolate chip cupcakes

Last summer I made what seemed like 3 dozen of these cupcakes. I did not realize that this recipe would make 3 dozen cupcakes! I was very surprised by the outcome but Hectors coworkers definitely enjoyed them! These were really tasty but I didn't make a homemade frosting and bought some instead... DEFINITELY A DON'T! Homemade frosting is a thousand times better then a store bought frosting. Oh and did I mention I had just bought a new mixer! It was a great investment!

Roasted Banana Cupcakes

I am way overdue on the baked goods I made last summer. I made these cupcakes using recipe from Martha Stewart. It was delicious!!! The one mistake I made was not wait for the cupcakes to cool before adding the frosting. So the butter in the frosting started to melt.

I had to put the bananas in the oven to roast.

Marble Cupcakes July 22nd 2010

I went back to baking cupcakes... I looked through my recipe books and decided to make Marble cupcakes because I did not want to make frosting. First I mixed the flour, baking powder, and salt and put aside. Then I combined the heavy cream and milk.

As always.. I had to cream together the butter and sugar. ( FYI do not microwave the butter because you forgot to leave it out... Just remove it from the fridge like 30mins to an hour before.)

I then added the eggs one by one.

Meanwhile I boiled water to make the chocolate batter. I then added the flour mix into the butter/sugar. I did this by adding 1/3 of the flour mix and then adding half the milk mix. I did this until it was all gone.

Once it was all combined I took out 1 cup of the batter and added the cocoa powder along with the boiling water until mixed. I then alternated the between batters starting with the vanilla mix and then the chocolate mix. I filled the cups up until it was 3/4 fill. Using a knife I made a figure-eight motion to make swirls.

I baked for about 20 minutes.

Once it was completely cool I added powder sugar on top.

It tasted pretty good but I think I would add brown sugar to the chocolate mix to take away the tart taste to it. YUM!
